About This Recipe
This recipe can be used to create a dip for salads too, not just pancakes. I prefer this as a pancake topping but feel free to experiment and use for other dishes.
What You'll Need
Step by Step
Use your favourite cottage cheese, making sure this is unflavoured and full fat. Using a fork mash the drier bits of the cottage cheese and mix it all together until you get a nice creamy consistency.
Add some lemon zest (I use half a lemon for half a small tub of cottage cheese but you can go crazy and add more, it won’t hurt you!)
Honey or maple syrup to sweeten it up. (I add around 1-2 tsp to half a tub).
Optional to add raisins.
