Ingredients (serves 1):
- 2 medium free range eggs
- 100 g courgette
- 1 tbsp hemp seed
- 1 tsp paprika powder
- 1tsp olive oil
- 1 large tomato on the vine
- a pinch of dried parsley / 1 tbsp fresh
- a pinch of sea salt
- freshly ground pepper to taste
Cooking method:
- Heat up your saucepan on the hob. When ready, add a tsp olive oil to it to grease.
- Chop up the courgette to small thin slices or cubes. Sauté them on the olive oil for 3-4 minutes or until softened.
- Whisk 2 medium free range eggs with a pinch of salt and 1 tsp paprika powder. Add this to the courgette to make your omelette.
- While the omelette is cooking, slice up the tomato to prepare a side salad. Sprinkle with pumpkin seeds and drizzle with olive oil.
- When the omelette is ready, serve with your salad and sprinkle the hemp seed on top.
- Serve with your favourite seeded bread (opt.).
Tips: You can add the hemp seeds to the omelette just before it is ready for an extra crunch. Use other seeds like sunflower seed, chia seeds if preferred.
